Spicy BBQ Oil
We have looked at every area of the cooking process to see how we can improve and enhance. Then we experimented with lots of types of oils to see which cooked best and the Cotswold rapeseed oil won hands down. This particular oil was chosen as it has a very high burn point so can withstand high temperatures which is ideal for the BBQ.
We then looked at getting some extra flavours into the cooking. We played around with a variety of infused oils and then hit upon two great blends. The focus was on Smoked oil with the addition of charcoal, garlic and chilli. The aim is the give subtle background notes of the BBQ and building on layers of flavour. Made for us by Cotswold Gold, based near Broadway. Specialising in multi-award winning Cold Pressed Virgin Rapeseed Oil.
The beech smoked rapeseed oil is smoked locally by Upton Smokery. It is made from original Cotswold Gold oil, smoked for 18 hours in small batches over beech wood, and has a distinctive flavour that adds depth to dishes.
