Not only have we focused on traditional fragrances for fish, but we have taken some inspiration from the ever-popular Japanese cuisine with the Sansho Pepper cure which includes Red Chilli, White Sesame, Orange Peel, Black Sesame, Ginger and Nori Seaweed. The process and contents of the kits are the same, you just need to add the Salmon.

This is our brand new kit, which includes three new curing mixes. The new curing mixes include, Citrus, Dill & Mustard and Sansho Pepper. Our Kit includes everything you need to cure your own salmon at home. Home-curing has been a popular trend over the last year or so, giving you the ability to make proper dry-cured salmon in the comfort of your own home. Curing is any of various food preservation and flavouring processes such as meats and fish, by the addition of combinations of, salts, nitrates, nitrites or sugar. The aim is to draw the moisture out of the meat by the process of osmosis.

Although it sounds complicated, it really isn’t! The process is so simple, and only takes 7 steps. The whole process takes 3 days and your Kit comes with an easy to read instructions booklet for you to follow. Citrus Cure: Rock Salt, Demerara Sugar, Lime Peel, Lemon Peel, Yuzu Peel, Orange Peel.

Dill & Mustard Cure: Rock Salt, Demerara Sugar, Dill, English Mustard, Liquorice.

Sansho Pepper Cure: Rock Salt, Demerara Sugar, Sansho Pepper, Red Chilli, White Sesame, Orange Peel, Black Sesame, Ginger, Nori Seaweed.

You will need 500g of Salmon Fillet for each 30g Curing Mix
