What’s in the box?

The kit itself contains 3 curing mixes, 3 curing bags, a roll of muslin, 3 pairs of plastic gloves, a butcher’s hook, and a booklet with easy to follow instructions. Just add pork and a fridge, and you’re good to go.

The curing mixes that come in a box weigh 30g each and are perfect for a single recipe. Flavours available are original, sweet and smoky. When you fall in love with them, you will be able to get your hands on refill packs. Or try something spicier.

All three are gluten-free, dairy-free and handmade with natural ingredients.

A lot of other kits fail to include a butcher’s hook. And it’s not because they don’t trust their customers not to recycle it as a prop when they are out and about, reminding teenagers about the things they did last summer. It’s because they don’t want them to have an insurance policy in case the aliens decide they want their bacon now, right now.

However, a hook is a must for full 360-degree perfection. In short, here’s how it’s done.

Get your hands on half a kilo of pork belly goodness. Place in one of the bags and add the cure. Rub the cure all over, seal the bag and leave in the fridge for 4 days.

After that, wash the cure off and wrap the bacon in muslin. Install the hook and leave it to hang in your fridge for 3 days this time.

While the meat is hanging on the hook, all parts are exposed to the air and it dries thoroughly. Yes, a cooling rack can work in a pinch, but you’ll have to babysit and continuously turn over your pig to get similar results. Oh, and maybe avoid some nasty surprises.

Though they are mandatory for interstellar defence and general personal use, the bacon curing kit is also an excellent gift for your favourite glutton, a passionate foodie and home cook. Even that friend who can’t boil water will love how easy it is to use.

However, something tells me it might not be appropriate for vegans. Not sure why…
