After that, wash the cure off and wrap the bacon in muslin. Install the hook and leave it to hang in your fridge for 3 days this time.
While the meat is hanging on the hook, all parts are exposed to the air and it dries thoroughly. Yes, a cooling rack can work in a pinch, but you’ll have to babysit and continuously turn over your pig to get similar results. Oh, and maybe avoid some nasty surprises.
