Perfect pre-drinks canapes

Cured salmon is an excellent nibble for a party or buffet. Salmon blinis are always the star of the buffet table. Begin with your blini – you can purchase them ready-made – and top with soured cream and a piece of cured salmon. If you fancy pushing the boat out, you can add a teaspoon of caviar, but we love some freshly snipped chives as well. For a low carb alternative, try piling cured salmon atop rounds of cucumber with a dollop of cream cheese or horseradish cream.

Versatile brunch ingredient

Many of our favourite cured salmon dishes appear at breakfast, lunch or in-between. Try using your salmon with toasted bagels and scrambled eggs, added to an omelette or topped with a poached egg.

Try your hand at making sushi

Sushi is becoming a lunchtime staple here in the UK. The stuff you find in the chiller cabinet of your local supermarket can be a bit dry and tasteless. Why not have a go at making your own sushi, topped with rich, flavorful cured salmon? BBC Good Food has an excellent step by step video to get you started, but remember that sushi chefs study for many years to achieve perfection!

A twist on ceviche

Ceviche is a seafood dish typically made from fresh raw fish cured in citrus juices, such as lemon or lime, with a selection of other added flavours. It originates from South America and makes a delicious light lunch on a hot day. You have already begun the curing process of your salmon so you won’t need as much acid, but you’ll still get delicious results.

Sandwich heaven

We’ve saved this for last as nobody could decide how to make the best sandwich. Choose your favourite bread – we like a coarse rye, a chewy sourdough or focaccia scented with herbs. A bap or a sliced white loaf will do in a pinch! A salmon and cucumber sandwich is a quintessential British classic that takes you right back to genteel afternoon teas of yesteryear, but we’ve brought it bang up to date with avocado and sriracha. Let your imagination run wild, but be careful not to overpower the delicate flavours of the salmon.
