Glazed Pork Fillet

This is a great way to cook a whole piece of pork for your family or for a dinner party. Sweet, salty, fruity and spicy pork cooked hot and fast for a tender finish.

Cook time: 10 mins

Ingredients:

Method:

  1. Take the meat out of the fridge at least 30 mins before cooking to come to room temperature
  2. Trim any sinew off the pork
  3. Light BBQ using British charcoal
  4. Once lit, place the grates directly over the charcoal to heat. Ideally raise the charcoal to get this close to the grates
  5. Drizzle with BBQ Oil
  6. Season well with Sea Salt
  7. Place over the hot coals and cook for around two minutes each side until they have a nice colour
  8. Place the BBQ Jam into a saucepan and heat gently on the BBQ whilst the pork is cooking
  9. Now glaze the pork generously with a brush
  10. Continue to cook and glaze on all sides for a couple more minutes. Watch it doesn’t burn
  11. Check the pork, it should still feel a bit soft to touch if you want the pork medium. Cook for longer to your liking
  12. Move the pork away from the hot coals to rest for 5-10 minutes
  13. Carve into discs and serve. Season if needed
